The modification of starch by carboxymethylation to sodium carboxymethyl starch (CMS-Na) has been proven to be an alternative to increase its properties. Due to the presence of negatively charged functional group (CH2COO-), sodium carboxymethyl starch is with decreased gelatinization temperature, increased solubility and improved storage stability.
